Keto Yeast Bread

TOTAL TIME: 3 hours and 30 minutes, including time to proof, cool and rest
SERVES: 12

INGREDIENTS:

  • 2 tsp active dry yeast
  • 2 tsp inulin powder
  • ½ cup / 120 mL warm water (110 to 120 degrees F, 43 to 48 degrees C)
  • 1 2/3 cups / 168 g almond flour 
  • ½ cup / 77 g golden flax meal
  • 2 Tbsp unflavored collagen peptide powder
  • 1 Tbsp psyllium husk powder
  • 2 tsp xanthan gum
  • 2 tsp baking powder
  • 1 tsp garlic salt
  • ¼ tsp cream of tartar
  • 1 large egg white 
  • 3 large eggs
  • 1/3 cup + 2 tsp / 56 g butter, melted and cooled
  • 1 Tbsp + 2 tsp raw apple cider vinegar
  • ¼ cup / 58 g sour cream

DIRECTIONS:

  1. Preheat oven to 350 degrees F / 177 degrees C.

  2. In a large bowl, combine yeast and inulin powder. Pour warm water into the bowl and gently stir together. Loosely cover with plastic and let rest for 5 minutes. The activated yeast will look bubbly and foamy. This step is important to help your bread dough rise properly.

  3. In a separate bowl, combine almond flour, flax meal, collagen peptide powder, psyllium husk powder, xanthan gum, baking powder, garlic salt and cream of tartar. Stir together.

  4. In another separate bowl, combine egg white, eggs, butter, apple cider vinegar and sour cream. Stir together.

  5. Add egg mixture to yeast mixture and stir to combine. 

  6. Add the dry ingredients, half at a time, and stir to combine. Stir well until all ingredients are incorporated. 

  7. Line an 8.5 x 4.5 inch loaf pan with parchment, with extra parchment hanging over the sides. Spray liberally with cooking oil. 

  8. Add dough to the pan and evenly distribute. Cover with a towel. Let dough rise 1 hour to 1 hour and 30 minutes, or until the dough rises up to the edge of the pan. Be patient for the best outcome! The dough will lighten during this slow rising time.

  9. Bake for 30 minutes. Cover with aluminum and bake for an additional 45 to 55 minutes. 

  10. Allow bread to cool in the pan for 5 minutes. You may notice the bread deflate slightly as it cools. Remove from pan, slice and enjoy!
