Keto Spinach Artichoke Dip

Ingredients

4 oz frozen spinach, thawed

4 cloves garlic, chopped

4 oz organic cream cheese

¼ cup mayonnaise

¼ cup Parmesan cheese, grated

1 can artichoke hearts, chopped and drained

pinch of salt and pepper

½ cup mozzarella cheese, shredded

2 Tbsp Parmesan cheese, grated

Directions:

  1. Preheat oven to 350 degrees F / 177 degrees C.

  2. In skillet, sauté spinach and garlic on medium heat until spinach turns bright green. Remove from heat.

  3. Press spinach with paper towel or cheesecloth to drain liquid.

  4. In pot on low-medium heat, melt cream cheese until easy to stir.

  5. Stir in mayonnaise, ¼ cup of Parmesan cheese, artichoke hearts, salt, pepper, and mozzarella cheese.

  6. Add spinach to softened cream cheese mixture and stir until well combined.

  7. Pour into small baking dish and sprinkle with remaining Parmesan cheese.

  8. Bake for 20 minutes or until top starts to brown.

  9. Serve warm with fresh vegetables or low-carb tortilla chips.
