Ingredients

  • 4 ounces spinach thawed
  • 4 cloves garlic chopped
  • 4 ounces cream cheese organic
  • ¼ cup mayonnaise
  • ¼ cup Parmesan cheese grated
  • 14 ounces artichoke hearts chopped, drained
  • 1 pinch salt
  • 1 pinch pepper
  • ½ cup mozzarella cheese shredded
  • 2 tablespoons Parmesan cheese grated

Instructions

  • Preheat oven to 350 degrees F / 177 degrees C.
  • In skillet, sauté 4 ounces spinach and 4 cloves garlic on medium heat until spinach turns bright green. Remove from heat.
  • Press spinach with paper towel or cheesecloth to drain liquid.
  • In pot on low-medium heat, melt 4 ounces cream cheese until easy to stir.
  • Stir in ¼ cup mayonnaise, ¼ cup Parmesan cheese, 14 ounces artichoke hearts, 1 pinch salt, 1 pinch pepper, and ½ cup mozzarella cheese.
  • Add spinach to softened cream cheese mixture and stir until well combined.
  • Pour into small baking dish and sprinkle with 2 tablespoons Parmesan cheese.
  • Bake for 25 minutes or until top starts to brown.
  • Serve warm with fresh vegetables or low-carb tortilla chips.

  • For a spicier kick, add red pepper flakes or diced jalapeño peppers.
  • Instead of frozen spinach, you can use fresh spinach and sauté it with garlic until wilted.
