Keto Broccoli and Cauliflower Salad with Bacon

TOTAL TIME: 35 minutes
SERVES: 6

INGREDIENTS:

Dressing

  • 1 egg
  • 1 oz lemon juice
  • 1 tsp minced garlic
  • 1 Tbsp whole grain mustard
  • ¼ tsp sea salt
  • ¼ tsp black pepper
  • ½ tsp paprika 
  • ½ cup olive oil

 

Salad

  • 1 medium bunch broccoli, cut into florets and steamed
  • 1 head cauliflower, cut into florets and steamed
  • ½ red onion, diced
  • 6 slices bacon, cooked and crumbled

DIRECTIONS:

  1. In a large container blend dressing ingredients very well and set aside.

  2. In a large bowl, combine broccoli, cauliflower, red onion, and crumbled bacon. Toss with dressing and enjoy!
