Ingredients

  • 1 cup salmon canned, drained
  • ¼ cup almond flour
  • 1 tablespoon shallot chopped
  • 1 teaspoon fresh dill chopped
  • 1 teaspoon fresh parsley chopped
  • ½ teaspoon garlic salt
  • ½ teaspoon smoked paprika
  • 1 egg large
  • 2 tablespoons butter

Instructions

  • In a medium bowl combine 1 cup salmon, ¼ cup almond flour, 1 tablespoon shallot, 1 teaspoon fresh dill, 1 teaspoon fresh parsley, ½ teaspoon garlic salt, ½ teaspoon smoked paprika and 1 egg. Stir to combine ingredients.

  • Divide salmon mixture into 5 equal-sized portions. Shape portions by hand into rounded cakes about 1 inch thick. Set aside.
  • Heat a large saute pan to medium-high heat. Add 2 tablespoons butter and melt. Place salmon cakes into pan and cook for 3 minutes on each side. As the salmon cakes cook, spoon melted butter from the pan on top of the cakes to keep them moist and flavorful.
