Coconut Chocolate Chip Cookies

TOTAL TIME: 25 minutes
SERVES: 6 to 12 

INGREDIENTS:

  • ½ cup / 118.3 mL butter

  • ½ cup / 118.3 mL brown sweetener substitute

  • 4 large eggs

  • 1 tsp / 5 mL vanilla extract, sugar-free

  • ½ cup / 118.3 mL coconut flour

  • ½ tsp / 2.5 mL sea salt

  • 2 cups / 473 mL unsweetened shredded coconut 

  • ½ cup / 118.3 mL chocolate chips, sugar-free

DIRECTIONS:

  1. Preheat oven to 350 degrees F / 177 degrees C.

  2. Cream together butter and sweetener. Mix in eggs and vanilla.

  3. Stir in coconut flour and salt. Mix in shredded coconut and chocolate chips.

  4. If batter is too loose, add 1 Tbsp / 15 mL of coconut flour at a time until thick.

  5. Form dough balls and place on a greased cookie sheet.

  6. Bake for 12 to 15 minutes. After removing from oven, allow to cool.

  7. Enjoy!
