Keto Beef and Broccoli

KETO BEEF AND BROCCOLI

This is really a fantastic combination. This keto recipe is super tasty, loaded with health benefits, and is completely keto-friendly. 

Broccoli, of course, is really good for the body. But, you don't want to overcook the broccoli. Some people like to cook their broccoli until it's like mush. It may be much more beneficial to consume broccoli raw or have it chopped and then lightly cooked. This helps make sure the broccoli retains its phytonutrients, which have many health benefits. 

Ingredients:

  • 1½ lbs beef strips

  • 1 to 2 Tbsp olive oil 

  • 3 scallions, chopped

  • 7 cups raw broccoli florets 

  • 4 cloves garlic, diced

For the sauce:

  • ½ cup beef broth

  • 1 tsp Yuzu sauce

  • 1 Tbsp rice vinegar

  • 1 tsp sesame oil

  • ¼ cup liquid aminos

  • 1½ Tbsp granulated erythritol 

  • 2 Tbsp ginger paste

  • ½ tsp xanthan gum 

  • 1 tsp lemongrass paste

Instructions:

In a large pan, heat olive oil on medium-high heat and add beef and garlic. 

Cook until browned, about 5 minutes. Set aside.

Lightly steam broccoli for about 2 minutes and set aside.

Make sauce by adding all the ingredients to a bowl and whisk until combined; heat on low-medium heat until slightly thickened. 

In the same pan as the sauce, add the beef and coat it, cook for a couple of minutes, add the broccoli and mix. 

Cover with a lid and cook for an additional several minutes on low. 

Serve over cauliflower rice or by itself!
