How did you discover keto?
I started watching Dr. Berg’s videos in November 2020. It wasn’t as hard as I feared, but I think what worked for me was to keep things simple and consistent.
Did you have any problems with your weight or health before going on keto?
I weighed 297 pounds; I was put on meds and had an elevated A1C. I was pre-diabetic. Well, that news was enough for me.
How does an average day of eating/fasting look for you on keto?
The thing I did was eat one enormous meal per day, mostly vegetables, along with 4-6 ounces of protein. My meal consisted of a simple iceberg, baby carrots, and grape tomatoes, using a full-fat Italian salad dressing. The total weight of the salad was 20 ounces.
Every week, I make an extremely heavy vegetable soup, consisting of 3 POUNDS of spinach, kale, and cabbage. I also include beef bone broth, to which I add 70 grams of collagen powder. To add texture, I add a can of bean sprouts, a can of sliced water chestnuts, and a can of bamboo shoots. There is also garlic, onion, and broccoli added to the soup. After my salad, I will consume 1 and a half quarts of this soup. Finishing things off, I will eat a couple of chicken thighs for the protein.
As for fats, I began adding a quarter cup of Moroccan olive oil to my bowl of soup. I feel this does a hell of a job of reducing hunger pangs.
As for supplements, I take Chromium Picolinate before my meal, along with Berberine, Benfotiamine, Potassium, and Magnesium. There are a few others, but these are my mainstays.
How has your health improved since you started keto?
At the end of the day, I gave up sugar, starch, and Grains. These are the things that were wreaking havoc with my blood sugar, and as soon as I cut them completely out, my blood sugar stabilized rapidly. Within a month, my A1C improved.
Today I weighed in at 225, and I am still losing weight. My energy is up, and I’ve begun dealing with the wonderful problem of giving away clothes that are comically too big for me.
It took me a year to do this, and it wasn’t impossibly hard, but it takes a lot of consistency. I eat that huge meal once a day and do not eat again for another 24 hours. Trust me when I tell you…you won’t be hungry after eating that big meal!
If you could offer advice to someone starting keto, what would you say?
The best advice I can give anyone is to figure out what you can eat consistently and then stick to it. I was able to get off the blood pressure meds after losing the weight, and I have no doubt in my mind that anybody can do what I did and have similar results.
