Ingredients

Mashed Cauliflower Topping

  • 1 head cauliflower large, cut into florets
  • ¼ cup heavy cream
  • 4 ounces cream cheese softened
  • 1 cup shredded cheddar
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper
  • 1 tablespoon fresh parsley

Pie Filling

  • 1 pound ground beef
  • 1 tablespoon lard
  • 1 cup yellow onion chopped
  • 3 cloves fresh garlic chopped
  • ½ cup celery chopped
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper
  • 2 tablespoons tomato paste
  • 2 cups kale chopped
  • ½ cup beef broth

Instructions

  • Preheat oven to 350 degrees F / 175 degrees C and line 8 x 8-inch baking dish with parchment paper.
  • Bring 4 quarts of water to boil over high heat.
  • Place 1 head cauliflower into boiling water for 6 min, then remove from water and let drain. Once drained, place back into the same pot.

  • Add ¼ cup heavy cream, 4 ounces cream cheese, 1 cup shredded cheddar, 1 teaspoon sea salt, ½ teaspoon black pepper, and 1 tablespoon fresh parsley. Mash cauliflower until the mixture breaks down into a cheesy cauliflower mash topping.

  • In a large skillet over medium heat brown 1 pound ground beef in 1 tablespoon lard. Add 1 cup yellow onion, 3 cloves fresh garlic, and ½ cup celeryseason with 1 teaspoon sea salt and ½ teaspoon black pepper. Cook for about 3 to 4 minutes.

  • Add 2 tablespoons tomato paste to ground beef mixture. Cook for about 1 minute to balance acidity.

  • Add 2 cups kale and ½ cup beef broth , cook for 2 more minutes.

  • To build pie for baking, add ground beef and vegetable mixture to prepared baking dish. Top with mashed cauliflower and some cheddar cheese.
  • Bake for 15 to 18 minutes until top is golden brown in color.
