Preheat oven to 350 degrees F / 175 degrees C and line 8 x 8-inch baking dish with parchment paper.

Bring 4 quarts of water to boil over high heat.

Place 1 head cauliflower into boiling water for 6 min, then remove from water and let drain. Once drained, place back into the same pot.

Add ¼ cup heavy cream, 4 ounces cream cheese, 1 cup shredded cheddar, 1 teaspoon sea salt, ½ teaspoon black pepper, and 1 tablespoon fresh parsley. Mash cauliflower until the mixture breaks down into a cheesy cauliflower mash topping.

In a large skillet over medium heat brown 1 pound ground beef in 1 tablespoon lard. Add 1 cup yellow onion, 3 cloves fresh garlic, and ½ cup celeryseason with 1 teaspoon sea salt and ½ teaspoon black pepper. Cook for about 3 to 4 minutes.

Add 2 tablespoons tomato paste to ground beef mixture. Cook for about 1 minute to balance acidity.

Add 2 cups kale and ½ cup beef broth , cook for 2 more minutes.

To build pie for baking, add ground beef and vegetable mixture to prepared baking dish. Top with mashed cauliflower and some cheddar cheese.

Bake for 15 to 18 minutes until top is golden brown in color.
