Keto Shepherd’s Pie

Keto Shepherd’s Pie

Serves: 6

Per serving: 436 calories, 31 g protein, 7 g carbohydrates, 31 g fat

Ingredients

For the Mashed Cauliflower Topping:

  • 1 large head cauliflower, cut into florets
  • ¼ cup heavy cream
  • 4 ounces cream cheese, softened
  • 1 cup shredded cheddar
  • 1 tsp sea salt
  • ½ tsp black pepper
  • 1 Tbsp fresh parsley

  

For the Pie Filling:

  • 1 Tbsp lard or olive oil
  • 1 pound ground beef
  • 1 cup yellow onion, chopped
  • 3 each cloves fresh garlic, chopped
  • ½ cup celery, chopped
  • 1 tsp sea salt
  • ½ tsp black pepper
  • 2 Tbsp tomato paste
  • 2 cups kale, chopped
  • ½ cup beef broth or bone broth

Directions:

1.   Preheat oven to 350 degrees fahrenheit,  Spray the inside of a 8 x 8 with olive oil spray or line with parchment paper.

2.   Bring 4 quarts of water to boil over high heat.

3.   Place the cauliflower into the boiling water for 6 min remove from water and let drain. Once drained, place back into the same pot.

4.   Add heavy cream, cream cheese, cheddar, salt, pepper and fresh parsley. Mash the cauliflower until the cauliflower breaks down. Giving you a chessy cauliflower mash topping.

5.   In a large skillet over medium heat brown the ground beef in the lard. Add onions, garlic, celery season with salt and pepper. Cook for about 3-4.

6.   Add the tomato paste to the ground beef mixture.  Cook for about 1 min to balance the acidity. 

7.   Add chopped kale and broth, cook for 2 min

8.   Now you can build your pie for baking.  Add your ground beef and vegetable mixture to the 8x 8 pan.  Top with chessy mashed cauliflower and the rest of the cheddar.

9.   Bake for 15-18 min until the top is golden brown in color.
