Preheat oven to 350 degrees F / 175 degrees C. Line 8 x 8-inch baking dish with parchment paper.
Bring four quarts of water to boil over high heat.
Place 1 head cauliflower into boiling water for six min, then remove from water and let drain. Once drained, place back into same pot. Mash cauliflower.

Add ¼ cup heavy cream, 4 ounces cream cheese, 1 cup shredded cheddar, 1 teaspoon sea salt, ½ teaspoon black pepper, and 1 tablespoon fresh parsley. Continue to mash until mixture breaks down into cheesy cauliflower mash topping.

In large skillet over medium heat brown 1 pound ground beef in 1 tablespoon lard. Add 1 cup yellow onion, 3 cloves fresh garlic, ½ cup celery, 2 tablespoons tomato paste, 2 cups kale. Mix well.

Add ½ cup beef broth . Season with 1 teaspoon sea salt and ½ teaspoon black pepper. Cook for about 3 to 4 minutes.
To build pie for baking, add ground beef and vegetable mixture to prepared baking dish. Top with mashed cauliflower and 1 cup cheddar cheese.
Bake for 15 to 18 minutes until top is golden brown in color.
