Keto Pork Rind Nachos

- 1 Tbsp / 15 mL olive oil
- 1 lb / .45 kg lean ground beef
- 4 oz plain pork rinds, whole pieces
- ½ cup / 118 mL pickled sliced jalapenos
- 2 cups / 473 mL shredded cheddar
Heat oven to 400 degrees F / 200 degrees C. Lightly grease a baking pan (9x5 shown in video) with olive oil.
Heat olive oil in a large skillet over medium-high heat. Add the ground beef. Cook, stirring and breaking up the meat, until no longer raw, about 5 minutes. Drain well. It's important to drain really well or the meat juices will make the pork rinds soggy.
Spread pork rinds (whole pieces) in a single layer on the prepared pan. Top with cooked ground beef, then arrange jalapenos on top. Sprinkle shredded cheese evenly over all.
Bake until the cheese is melted, about 5 minutes. Serve immediately.
