Heat 1 tablespoon olive oil in large skillet over medium-high heat. Add 1 pound ground beef. Cook, stirring and breaking up meat, until no longer raw, about five minutes. Drain well.

Spread 4 ounces pork rinds in single layer on prepared pan. Top with cooked ground beef, then arrange ½ cup pickled jalapeños and 2 cups cheddar cheese on top.
