Heat oven to 400 degrees F / 204 degrees C. Lightly grease a 9 x 5 inch baking pan with Olive oil cooking spray.

Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add 1 pound ground beef. Cook, stirring and breaking up the meat, until no longer raw, about 5 minutes. Drain well.

Spread 4 ounces pork rinds in a single layer on the prepared pan. Top with cooked ground beef, then arrange ½ cup pickled jalapenos and 2 cups cheddar cheese on top.
