Keto Bacon-Wrapped Meatloaf

TOTAL TIME: 35 minutes
- 2 lbs ground beef
- 2 large eggs
- 2 Tbsp coconut aminos
- 1 cup shredded cheddar
- ½ cup onion, chopped
- 3 cloves garlic, chopped
- 3 stalks celery, chopped
- ½ cup almond flour
- ¼ cup grated Parmesan
- 2 Tbsp fresh parsley, chopped
- 1 Tbsp fresh thyme, chopped
- 1½ tsp sea salt
- ½ tsp black pepper
- 8 strips bacon
- olive oil spray
In a large mixing bowl combine ground beef, eggs, aminos, cheddar, onion, garlic, celery, almond flour, Parmesan, parsley, thyme, salt and pepper. Mix well until all ingredients are blended.
Cut bacon slices in half, giving you twelve halves about 4 inches in length.
Spray a bread or loaf pan with the olive oil spray. Then press the meat mix into the loaf pan.
Lay the bacon on top with each slice slightly touching the next until the top of the beef is covered.
Bake for 35 to 40 minutes.
For more uniform slices, allow to cool 20 minutes before slicing.
