Ingredients

  • 2 pounds ground beef
  • 2 eggs large
  • 2 tablespoons coconut aminos
  • 1 cup cheddar cheese shredded
  • ½ cup onion chopped
  • 3 cloves garlic chopped
  • 3 stalks celery chopped
  • ½ cup almond flour
  • ¼ cup Parmesan cheese grated
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon fresh thyme chopped
  • teaspoons sea salt
  • ½ teaspoon black pepper
  • 8 strips bacon
  • Olive oil spray

Instructions

  • In a large mixing bowl combine 2 pounds ground beef, 2 eggs, 2 tablespoons coconut aminos, 1 cup cheddar cheese, ½ cup onion, 3 cloves garlic, 3 stalks celery, ½ cup almond flour, ¼ cup Parmesan cheese, 2 tablespoons fresh parsley, 1 tablespoon fresh thyme, 1½ teaspoons sea salt and ½ teaspoon black pepper. Mix well until all ingredients are blended.
    2 pounds ground beef, 2 eggs, 2 tablespoons coconut aminos, 1 cup cheddar cheese, ½ cup onion, 3 cloves garlic, 3 stalks celery, ½ cup almond flour, ¼ cup Parmesan cheese, 2 tablespoons fresh parsley, 1 tablespoon fresh thyme, 1½ teaspoons sea salt, ½ teaspoon black pepper
  • Cut 8 strips bacon in half, giving you twelve halves about 4 inches in length.

  • Spray bread or loaf pan with the Olive oil spray spray, then press the meat mix into the loaf pan.

  • Lay bacon on top, each slice slightly touching the next until the top of loaf is covered.
  • Bake for 35 to 40 minutes.
  • For more uniform slices, allow to cool 20 minutes before slicing.
