Keto Brownies (nut-free)

TOTAL TIME: 25 to 35 minutes including baking 
SERVES: 12

INGREDIENTS:

  • 6 Tbsp / 85 g butter, softened
  • 2 Tbsp coconut shortening
  • ¾ cup /120 g unsweetened chocolate, discs or squares
  • 3 eggs
  • 2 Tbsp monk fruit sweetener
  • 3 Tbsp arrowroot powder
  • ½ cup / 80 g stevia-sweetened milk chocolate style chocolate chips

DIRECTIONS:

  1. Combine butter, coconut shortening, and unsweetened chocolate in a microwave-safe bowl and heat on high for 1 minute. Add 30 second intervals until the butter and chocolate are melted. Stir and reserve until cool. 

  2. Preheat oven to 350 degrees F / 175 degrees C.

  3. Whisk eggs, monk fruit sweetener and arrowroot powder until smooth. Add the melted chocolate mix and stir until incorporated. 

  4. Add chocolate chips and mix them into the batter.

  5. Spray an 8 X 8” baking dish and pour the batter into it, distributing evenly.

  6. Bake for 15 to 20 minutes. Do not overcook.
