Ingredients

Pudding

  • ½ cup coconut milk
  • 1 cup vanilla almond milk unsweetened
  • ½ cup chia seeds whole
  • 2 tablespoons cocoa powder unsweetened
  • 1 tablespoon erythritol
  • 5-6 drops stevia

Garnish

  • coconut flakes
  • pecans substitute for different nut if desired
  • keto-friendly chocolate keto-friendly, Lily’s brand is suggested

Instructions

  • In a mason jar, or any container with a lid add ½ cup coconut milk (from can).

  • Add 1 cup vanilla almond milk.

  • Add ½ cup chia seeds (whole).

  • Add 2 tablespoons cocoa powder and 1 tablespoon erythritol.

  • Shake or mix well.
  • Let set overnight or for at least 5-6 hours.
  • Garnish with coconut flakes, pecans, or keto-friendly chocolate (we used Lily’s for this recipe).
