Instructions
- In a mason jar, or any container with a lid add ½ cup coconut milk (from can).½ cup coconut milk
- Add 1 cup vanilla almond milk.1 cup vanilla almond milk
- Add ½ cup chia seeds (whole).½ cup chia seeds
- Add 2 tablespoons cocoa powder and 1 tablespoon erythritol.2 tablespoons cocoa powder, 1 tablespoon erythritol
- Add 5-6 drops stevia.5-6 drops stevia
- Shake or mix well.
- Let set overnight or for at least 5-6 hours.
- Garnish with coconut flakes, pecans, or keto-friendly chocolate (we used Lily’s for this recipe).pecans, keto-friendly chocolate, coconut flakes
Chia pudding is a great substitute for conventional pudding or yogurt. It’s very healthy: full of nutrients and fiber.
