Melt 1 tablespoon coconut oil in pan over medium heat.

Add 3 ounces shredded beef. Cook 3 to 4 minutes.

Whisk 2 eggs in bowl. Pour into pan with beef. Gently fold until eggs are fully cooked.

In bowl, toss 1½ cups salad greens with 1 tablespoon olive oil and juice of ½ lemon. Salt to taste.

Plate beef and eggs with dressed salad greens and ½ avocado.
If you make the shredded beef ahead of time, this delicious breakfast should only take 10 minutes to throw together.
