Ingredients

  • ¾ cup almond flour
  • tablespoons psyllium husk
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup water
  • 2 egg whites
  • tablespoons apple cider vinegar

Instructions

  • Preheat oven to 350 degrees / 176 degrees C.
  • Mix together ¾ cup almond flour, 2½ tablespoons psyllium husk, 1 teaspoon baking powder, and ½ teaspoon salt.
  • Start to bring ½ cup water to a boil. 
  • Mix in 2 egg whites and 1½ tablespoons apple cider vinegar. This mixture will be a little clumpym which is normal.
  • Add boiling water and mix until a solid dough forms.
  • Divide into muffins, or bake in a loaf pan.
  • For muffins, bake for about 30 minutes and around 45 minutes for loaf.
This recipe is a great substitute for a breakfast muffin.  It is DELICIOUS with butter on it!  The psyllium husk gives these muffins an awesome muffin-y texture.
