Ingredients

  • ¼ onion medium
  • 4 cloves garlic
  • 1 bell pepper
  • 1 tablespoon avocado oil
  • 6 ounces ground beef
  • 1 cup cauliflower rice
  • 2 tablespoons tomato sauce optional
  • 1 ounce cheese

Instructions

  • Preheat oven to 400 degrees F / 204 degrees C.
  • Chop ¼ onion and 4 cloves garlic. Cut 1 bell pepper in half and remove seeds.  
  • In a pan, add 1 tablespoon avocado oil, chopped garlic and chopped onions.  Cook on medium-low for about 5 to 7 minutes.
  • Add 6 ounces ground beef. Cook on medium heat until cooked thoroughly.
  • Add 2 tablespoons tomato sauce for extra flavor (optional).
  • Combine ground beef with 1 cup cauliflower rice.
  • Place mixture into bell peppers and add 1 ounce cheese on top.
  • Cook in oven for 15 to 20 minutes or until bell pepper is soft.
These yummy stuffed peppers are filled with cauliflower rice and ground beef along with the delicious flavors of onions and garlic!
