Preheat oven to 400 degrees F / 204 degrees C.

Chop ¼ onion and 4 cloves garlic. Cut 1 bell pepper in half and remove seeds.

In a pan, add 1 tablespoon avocado oil, chopped garlic and chopped onions. Cook on medium-low for about 5 to 7 minutes.

Add 6 ounces ground beef. Cook on medium heat until cooked thoroughly.

Add 2 tablespoons tomato sauce for extra flavor (optional).

Combine ground beef with 1 cup cauliflower rice.

Place mixture into bell peppers and add 1 ounce cheese on top.

Cook in oven for 15 to 20 minutes or until bell pepper is soft.
