Ingredients

  • ¼ onion
  • 4 cloves garlic
  • 1 bell pepper
  • 1 tablespoon avocado oil
  • 6 ounces ground beef
  • 2 tablespoons tomato sauce optional
  • 1 cup cauliflower rice
  • 1 ounce cheese

Instructions

  • Preheat oven to 400 degrees F / 204 degrees C.
  • Chop ¼ onion and 4 cloves garlic. Cut 1 bell pepper in half and remove seeds.

  • In pan, add 1 tablespoon avocado oil, chopped garlic and chopped onions. Cook on medium-low for about 5 to 7 minutes.

  • Add 6 ounces ground beef. Cook on medium heat until cooked thoroughly.

  • Add 2 tablespoons tomato sauce for extra flavor.

  • Combine ground beef with 1 cup cauliflower rice.

  • Place mixture into bell peppers and add 1 ounce cheese on top.

  • Cook in oven for 15 to 20 minutes or until bell pepper is soft.
