In a bowl, combine 1 cup almond flour, 1 tablespoon baking powder, and ½ tablespoon garlic powder.

Add ½ cup cheddar cheese, 1 egg, ½ cup half and half, and 10 drops Stevia.

Chop 4 scallions and add them to the mixture. Add 1 pinch salt.

In a saucepot, add 2 cups avocado oil. Over medium heat, bring temperature up to 350 degrees F / 176 degrees C using a meat thermometer to check.

Using a tablespoon sized scooper, add mixture to oil.

Cook until golden brown on the outside and done inside. If Hush Puppies are still raw on the inside, finish cooking them in the oven at 400 degrees F / 204 degrees C, to avoid burn them.

For dipping sauce, mix ¼ cup sour cream, 2 tablespoons mayonnaise, and 1 tablespoon chili sauce.
