Ingredients

Hush Puppies

  • 1 cup almond flour
  • 1 tablespoon baking powder
  • ½ tablespoon garlic powder
  • ½ cup cheddar cheese shredded
  • 1 egg large
  • ½ cup half and half
  • 10 drops Stevia
  • 4 scallions
  • 1 pinch salt
  • 2 cups avocado oil

Dipping Sauce

  • ¼ cup sour cream
  • 2 tablespoons mayonnaise
  • 1 tablespoon chili sauce

Instructions

  • In a bowl, combine 1 cup almond flour, 1 tablespoon baking powder, and ½ tablespoon garlic powder.

  • Add ½ cup cheddar cheese, 1 egg, ½ cup half and half, and 10 drops Stevia.

  • Chop 4 scallions and add them to the mixture. Add 1 pinch salt.

  • In a saucepot, add 2 cups avocado oil.  Over medium heat, bring temperature up to 350 degrees F / 176 degrees C using a meat thermometer to check.

  • Using a tablespoon sized scooper, add mixture to oil.
  • Cook until golden brown on the outside and done inside.  If Hush Puppies are still raw on the inside, finish cooking them in the oven at 400 degrees F / 204 degrees C, to avoid burn them.
  • For dipping sauce, mix ¼ cup sour cream, 2 tablespoons mayonnaise, and 1 tablespoon chili sauce.
