In a bowl, combine 1 cup almond milk, ¼ cup chia seeds, 2 tablespoons peanut butter, 1 tablespoon erythritol, and 1 teaspoon vanilla extract . Mix well.

Cover and refrigerate overnight to allow chia seeds to absorb liquid and thicken into a pudding.
