Ketogenic Chia Pudding

Total Time: 10 minutes prep time + 4-6 hours to let the pudding set

Serves: 2

Per serving: 250 calories, 8 g protein, 3 g carbohydrates, 16 g fat

Ingredients

Almond Milk - 1 cup

Chia Seeds - 1/4 cup, whole

Vanilla Extract - 1 teaspoon

Peanut Butter (no additives) - 2 tablespoons

Erythritol - 1 tablespoon, powdered 

Directions:

In a bowl, combine almond milk, chia seeds, peanut butter, and vanilla extract.

Mix well.  

Chia seeds require some time to set.  The almond milk and chia seed will become gelatinous.  The best way to ensure that you allow it enough time to set is to let it set overnight.

Garnish with your favorite low-carb toppings.
