Ingredients

  • cups cauliflower cut into florets
  • 2 cups pork rinds
  • 2 eggs large
  • ½ teaspoon garlic powder
  • cup sriracha
  • ¼ cup butter
  • green onions garnish

Instructions

For cauliflower bites:

  • Beat 2 eggs, then add eggs to 2½ cups cauliflower . Make sure that all cauliflower is covered in egg.

  • Add ½ teaspoon garlic powder. Mix well.

  • In a food processor or blender, grind down 2 cups pork rinds.

  • Coat cauliflower in pork rinds.
  • Bake for 25 to 30 minutes. Cauliflower should be cooked, but still firm.
  • Place cauliflower in a bowl.

For buffalo sauce:

  • Melt down ¼ cup butter over medium-low heat.

  • Add ⅓ cup sriracha. Mix well.

  • Pour sauce over cauliflower.
  • Slice green onions for garnish.

  • Serve with your favorite low-carb dressing.

Cauliflower is the jack of all trades.  This dish is a take on buffalo chicken, but it uses cauliflower instead of chicken.  Buffalo sauce is very easy to make: butter and chili sauce (that’s it!)
