Instructions
For cauliflower bites:
- Beat 2 eggs, then add to 2½ cups cauliflower . Toss until cauliflower is evenly covered.2½ cups cauliflower, 2 eggs

- In food processor or blender, grind 2 cups pork rinds.2 cups pork rinds
- Coat cauliflower in pork rinds.
- Bake for 25 to 30 minutes. Cauliflower should be cooked, but still firm.
- Place cauliflower in bowl and set aside.
For buffalo sauce:
- Melt down ¼ cup butter over medium-low heat.¼ cup butter

- Pour sauce over cauliflower.
