For cauliflower bites:
Beat 2 eggs, then add eggs to 2½ cups cauliflower . Make sure that all cauliflower is covered in egg.

In a food processor or blender, grind down 2 cups pork rinds.

Coat cauliflower in pork rinds.
Bake for 25 to 30 minutes. Cauliflower should be cooked, but still firm.
Place cauliflower in a bowl.
For buffalo sauce:
Melt down ¼ cup butter over medium-low heat.

Add ⅓ cup sriracha. Mix well.

Pour sauce over cauliflower.
Slice green onions for garnish.
