Ingredients

Cauliflower bites:

  • 2 eggs large
  • cups cauliflower florets
  • ½ teaspoon garlic powder
  • 2 cups pork rinds

Buffalo sauce:

  • ¼ cup butter
  • cup sriracha
  • green onions

Instructions

For cauliflower bites:

  • Beat 2 eggs, then add to 2½ cups cauliflower . Toss until cauliflower is evenly covered.

  • Add ½ teaspoon garlic powder. Mix well.

  • In food processor or blender, grind 2 cups pork rinds.

  • Bake for 25 to 30 minutes. Cauliflower should be cooked, but still firm.
  • Place cauliflower in bowl and set aside.

For buffalo sauce:

  • Melt down ¼ cup butter over medium-low heat.

  • Add ⅓ cup sriracha. Mix well.
