Ingredients

  • 4 medium green peppers halved

  • 1 packet taco seasoning mix
  • ¼ cup water

Instructions

  • Preheat oven to 350 degrees F / 177 degrees C.
  • Slice 4 medium green peppers lengthwise through the middle. Remove seeds.

  • Place cut-side down in medium casserole dish with ¼ cup water. Cover tightly with foil and bake for 10 to 15 minutes, until just tender.

  • Brown ½ pound ground beef until cooked. Add 1 packet taco seasoning mix and ½ cup water; cook per packet instructions.

  • Stir in 1 cup sour cream, ½ cup salsa, and 1 cup cheddar cheese.
