Preheat oven to 350 degrees F / 177 degrees C.
Brown ½ pound ground beef until cooked. Add 1 packet taco seasoning mix and ¾ cup water .
Pour cooked meat in bowl. Add ½ cup salsa , 1 cup sour cream and ½ cup cheddar cheese .
Slice 4 green peppers lengthwise through middle. Remove seeds.

Spray baking dish with cooking spray . Generously stuff peppers with meat mixture, arrange in dish, and top with remaining 1 cup cheddar cheese .
