Ingredients

  • ¾ pound Italian sausage casing removed
  • cup marinara sauce unsweetened
  • 3 tablespoons fresh basil chopped
  • 4 tablespoons Parmesan cheese grated
  • 1 pound spaghetti squash
  • 1 egg
  • 2 tablespoons salt
  • 1 teaspoon pepper
  • olive oil spray

Instructions

  • Preheat oven to 350 degrees.
  • Cut 1 pound spaghetti squash in half and remove seeds.
  • Place squash flesh side down and bake for 30 to 35 min until squash becomes soft.
  • Remove casings from ¾ pound Italian sausage. In large skillet over medium heat brown sausage and set aside.
  • Once Spaghetti squash is baked use fork to scrape out flesh resembling spaghetti noodles into large mixing bowl.
  • Combine squash with 1½ cup marinara sauce, 3 tablespoons fresh basil, 2 tablespoons salt, 1 teaspoon pepper, and 1 egg, mix well.
  • In small loaf pan, use olive oil spray and line with parchment paper.
  • Place mix into loaf pan and sprinkle with 4 tablespoons Parmesan cheese.
  • Bake at 350 degrees for 25 minutes.
