Preheat oven to 400 degrees.

Cut 2 ounces cream cheese into cubes and place in a heat-safe bowl with 1 ½ cups mozzarella cheese.

Melt down mozzarella cheese and cream cheese in a double boiler. Gently fold until completely mixed together.

Add 1 egg, mix into cheese mixture.

Add 1 1/2 cups almond flour and 1/2 teaspoon baking soda, knead until completely incorporated.

Divide into 5 equal parts. Roll into balls.

Bake for 20-25 mins.
This recipe is a substitution for bread. However, each roll is very dense with cheese and almond flour, so it is on the higher end of carbs and fats. It is still keto-friendly, just make these as a treat every now and then!
