  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • 1 pinch sea salt
  • 1 pinch pepper
  • 1 pound eggplant cut crosswise into ½-inch-thick slices
  • Olive oil cooking spray

Instructions

  • Preheat oven to 400 degrees F / 204 degrees C.
  • In a bowl, combine ¼ cup olive oil , ½ teaspoon onion powder, ½ teaspoon garlic powder, 1 pinch sea salt and 1 pinch pepper. Mix well. Add 1 pound eggplant and toss to coat.
