In bowl, combine ¼ cup olive oil , ½ teaspoon onion powder, ½ teaspoon garlic powder, 1 pinch sea salt and 1 pinch pepper. Mix well. Add 1 pound eggplant and toss to coat.
Coat baking sheet with olive oil cooking spray. Arrange eggplant on baking sheet in even layer. Bake for 25 to 30 minutes or until golden brown.
