Ingredients

  • 10 ounces cauliflower florets
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • ¼ teaspoon chili flakes
  • ¼ teaspoon sea salt
  • ¼ teaspoon black pepper ground
  • 4 tablespoons parsley chopped
  • 1 tablespoon lemon juice
  • ½ cup almonds sliced
  • ½ cup grape tomatoes cut in half

Instructions

  • In food processor pulse 10 ounces cauliflower florets into riced cauliflower.  You can also grate on a box grater if you don’t have a processor.

  • Heat large skillet over medium high heat.  Add 2 tablespoons olive oil.

  • Brown cauliflower in skillet for 4 minutes. Add 2 cloves garlic, ¼ teaspoon chili flakes, ¼ teaspoon sea salt, ¼ teaspoon black pepper, 4 tablespoons parsley and 1 tablespoon lemon juice.
