In food processor pulse 10 ounces cauliflower florets into riced cauliflower. You can also grate on a box grater if you don’t have a processor.

Heat large skillet over medium high heat. Add 2 tablespoons olive oil.

Brown cauliflower in skillet for 4 minutes. Add 2 cloves garlic, ¼ teaspoon chili flakes, ¼ teaspoon sea salt, ¼ teaspoon black pepper, 4 tablespoons parsley and 1 tablespoon lemon juice.

Finish with sliced ½ cup almonds and ½ cup grape tomatoes and enjoy.
