Instructions
- Place cauliflower in a microwave-safe bowl, breaking down bigger 1 pound cauliflower. Microwave for 5 to 8 minutes, depending on your microwave oven, until completely cooked and tender. Let sit uncovered for a minute or two.1 pound cauliflower
- Add cauliflower to a food processor and process until fluffy.
- Add 3 tablespoons butter, ¼ teaspoon garlic powder, and 4 ounces sour cream and process until it resembles the consistency of mashed potatoes.3 tablespoons butter, ¼ teaspoon garlic powder, 4 ounces sour cream
- Remove the mashed cauliflower to a bowl and add most of the chives, saving some to add to the top later. Add half the cheese and mix by hand.2 tablespoons chives, 1 cup cheddar cheese
- Top loaded cauliflower with the 2 slices bacon and the remaining cheese and chives.2 slices bacon, 2 tablespoons chives
