Ingredients

  • 6 ounces stew beef grass-fed, cubed
  • 1 onion medium, sliced
  • 1 tablespoon red curry paste sugar-free
  • 1 cup coconut milk organic
  • 1 cup cauliflower rice cooked
  • Cilantro to taste chopped
  • Celery to taste sliced
  • Carrots to taste sliced

Instructions

Beef

  • In slow cooker, cook 6 ounces stew beef and 1 onion on high for 4 to 5 hours or cover and bake in oven-safe dish at 350 degrees F / 177 degrees C for 4 to 5 hours. Meat should be tender but still hold together.

Curry sauce

  • After beef is cooked, in sauce pot over medium-low heat, add 1 tablespoon red curry paste. Stir briefly to warm and release flavor.
  • Pour in 1 cup coconut milk. Stir until smooth and fully combined.
  • Pour curry sauce over beef. Garnish with Cilantro to taste, Celery to taste, Carrots to taste.
  • Serve over 1 cup cauliflower rice and enjoy.
This curry is keto-perfect! The flavors are great and the coconut milk is high in fat. The only problem with curry is that a lot of restaurants add tons of cane sugar to their curry pastes. Choose a curry paste with low sugar content and make it in the comfort of your own home so that you can stay in ketosis!
