Instructions
- Crack 2 eggs into bowl and whisk.2 eggs
- In second bowl mix together 1 cup coconut flakes and ½ cup coconut flour, 1 teaspoon sea salt and ¼ teaspoon black pepper.1 cup coconut flakes, ½ cup coconut flour, 1 teaspoon sea salt, ¼ teaspoon black pepper
- Put 1 pound chicken tenders into bowl with egg and coat well.1 pound chicken tenders
- Remove chicken from egg batter and put into bowl with coconut breading. Coat tenders well with breading by pressing breading into tenders. Remove from bowl and set aside.
- Heat 2 cups coconut oil in deep saucepan over medium heat.2 cups coconut oil
- Fry coconut-breaded chicken tenders until golden brown, about four minutes.
- Remove from oil and allow to cool on some paper towels. This will also allow excess oil to drain off.
