Put 1 pound chicken tenders into bowl with egg and coat well.

Remove chicken from egg batter and put into bowl with coconut breading. Coat tenders well with breading by pressing breading into tenders. Remove from bowl and set aside.
Heat 2 cups coconut oil in deep saucepan over medium heat.

Fry coconut-breaded chicken tenders until golden brown, about four minutes.
Remove from oil and allow to cool on some paper towels. This will also allow excess oil to drain off.
