Ingredients

  • 2 eggs large
  • ½ cup coconut flour
  • 1 cup coconut flakes
  • 1 pound chicken tenders
  • 2 cups coconut oil for frying

Instructions

  • Set up breading station using three separate bowls. Place whisked 2 eggs in first bowl, add ½ cup coconut flour in second bowl and 1 cup coconut flakes in third.

  • Coat 1 pound chicken tenders with coconut flour then egg mixture.

  • Remove chicken from egg batter and put into bowl with coconut flakes. Remove from bowl and set aside.
  • Heat 2 cups coconut oil in deep saucepan over medium heat.

  • Fry coconut-breaded chicken tenders until golden brown, about two minutes on each side.
  • Remove from oil and allow to cool on paper towels. This will allow excess oil to drain off.
  • Serve with leafy greens and enjoy!
