Tomato Sauce
- Preheat oven to 375 degrees F / 190 degrees C.
- Process 14 ounces pureed tomatoes, 1 tablespoon apple cider vinegar, 1 teaspoon red pepper flakes, 1 teaspoon onion powder, 1 teaspoon garlic powder, and 1 teaspoon dried oregano in a blender. - In a large deep skillet (or large pot) heat 1/4 cup extra virgin olive oil.1/4 cup extra virgin olive oil
- Add pureed tomato sauce, bring to a simmer, then lower to medium-low and simmer for 20 minutes until slightly thickened.
Cabbage Cups
- In a large bowl, combine ½ cup of tomato sauce with 1 pound ground beef, ¾ pound ground pork, 1 cup cauliflower rice, and ½ teaspoon thyme. - Evenly pack a 9 x 9-inch baking dish with the filling and spoon tomato sauce over the top.
- Bake for 45 to 55 minutes, until meat is cooked through and internal temperature reaches 150 degrees F / 66 degrees C.
- Fill 12 cabbage leaves evenly with filling.12 cabbage leaves
- Garnish with more thyme before serving.
