Instructions

  • Preheat the oven to 350 degrees F / 175 degrees C. Grease 8 muffin cups with Olive oil cooking spray.

  • In a bowl, combine ½ cup almond flour, 5 slices bacon, 4 eggs, ½ cup tomatillo salsa, and ¼ cup green bell pepper and mix well using a rubber spatula or whisk.

  • Pour mixture into prepared muffin cups.
  • Bake in preheated oven until a toothpick inserted into the center of a muffin comes out clean—about 30 minutes. Let cool for 10 minutes before serving.
