Ingredients

  • 2 ounces onion small diced
  • 1 clove garlic minced
  • 6 slices bacon uncooked
  • 3 slices chopped bacon uncooked
  • 1 pound ground beef grass-fed
  • 1 egg large
  • ¼ cup coconut flour
  • tablespoons salt
  • ¼ cup ketchup sugar-free
  • ¼ teaspoon black pepper
  • ½ teaspoon red chili flakes
  • 2 tablespoons fresh parsley chopped
  • toothpicks or skewers

Instructions

  • Preheat oven to 400 degrees F / 204 degrees C.
  • In medium skillet over medium heat, cook 2 ounces onion, 1 clove garlic, and 3 slices chopped bacon for 2 minutes or until vegetables are translucent. Transfer to heat-safe food processor and blend until smooth.
  • In medium bowl, combine bacon-onion purée, 1 pound ground beef, 1 egg, ¼ cup coconut flour, 1½ tablespoons salt, ¼ teaspoon black pepper, ½ teaspoon red chili flakes, 2 tablespoons fresh parsley, and half the ketchup. Mix until fully incorporated.
  • Roll mixture into 3-ounce balls
  • Cut remaining 6 slices bacon in half. Wrap one or two pieces around each meatball.
  • Place meatballs on baking sheet with bacon ends tucked underneath. Bake for 12 to 15 minutes, until cooked through and bacon is browned.
  • Skewer with each with toothpicks or skewers and serve with remaining sugar-free ketchup.
