Chop ¼ cup onions.

Melt 1 tablespoon coconut oil in pan on medium heat. Add chopped ¼ cup onions. Cook on medium-low heat for 5 minutes. Add 1 tablespoon butter.

Mix 3 eggs and 2 tablespoons cheese. Add egg mixture to pan on medium-low heat.

Cook slowly for 5 minutes. The eggs should firm up enough so you can flip it over into an omelet. If it doesn’t firm up enough, then cover the pan with a lid for 1 minute or until firm enough to flip.

Add salt and pepper to taste.
The cheese in this omelet adds extra fluffiness and flavor.
