Ingredients

  • ¼ cup onions
  • 1 tablespoon coconut oil
  • 1 tablespoon butter
  • 3 eggs large
  • 2 tablespoons cheese
  • salt and pepper to taste

Instructions

  • Chop ¼ cup onions.

  • Melt 1 tablespoon coconut oil in pan on medium heat. Add chopped ¼ cup onions.  Cook on medium-low heat for 5 minutes.  Add 1 tablespoon butter.

  • Mix 3 eggs and 2 tablespoons cheese.  Add egg mixture to pan on medium-low heat.

  • Cook slowly for 5 minutes.  The eggs should firm up enough so you can flip it over into an omelet.  If it doesn’t firm up enough, then cover the pan with a lid for 1 minute or until firm enough to flip.
  • Add salt and pepper to taste.
