Melt 1 tablespoon coconut oil in pan on medium heat. Add chopped ¼ cup onions. Cook on medium-low heat for five minutes. Add 1 tablespoon butter.

Cook slowly for five minutes. Eggs should be firm enough to flip into omelet. If not firm, cover pan with lid for one minute or until set enough to flip.
