  • 1 egg
  • 2 tablespoons heavy cream
  •  ½ cup peanut butter
  • 1 teaspoon vanilla extract
  • 2 tablespoons cocoa powder unsweetened
  •  ¼ teaspoon baking powder

Craving an indulgent dessert that won’t spike your blood sugar? These Keto Peanut Butter Brownies deliver rich chocolate flavor and smooth peanut butter in every satisfying bite.

Instructions

  • With electric mixer, mix together 1 egg, 2 tablespoons heavy cream,  ½ cup peanut butter, and 1 teaspoon vanilla extract.
  • Add 2 tablespoons cocoa powder and  ¼ teaspoon baking powder. Use electric mixer or fold in dry ingredients with rubber spatula.
  • Grease mini muffin pans, then pour mixture evenly into each cup, filling them about three-quarters full.
  • Bake in oven for 15 to 25 minutes. Use toothpick or fork to make sure inside of brownie is completely cooked.
  • Serve with keto vanilla ice cream and nuts for brownie a la mode!
