Instructions
- With electric mixer, mix together 1 egg, 2 tablespoons heavy cream, ½ cup peanut butter, and 1 teaspoon vanilla extract.
- Add 2 tablespoons cocoa powder and ¼ teaspoon baking powder. Use electric mixer or fold in dry ingredients with rubber spatula.
- Grease mini muffin pans, then pour mixture evenly into each cup, filling them about three-quarters full.
- Bake in oven for 15 to 25 minutes. Use toothpick or fork to make sure inside of brownie is completely cooked.
- Serve with keto vanilla ice cream and nuts for brownie a la mode!
