Ingredients

  • 2 tablespoons coconut flour
  • ¼ cup almond flour
  • ¼ cup erythritol
  • 1 egg large
  • 2 tablespoons butter
  • 2 tablespoons almond milk
  • 1 teaspoon baking powder
  • cup blueberries

Instructions

  • Preheat oven to 350 degrees.
  • In a bowl, mix together 2 tablespoons coconut flour, ¼ cup almond flour, ¼ cup erythritol, 1 egg, 2 tablespoons butter, 2 tablespoons almond milk, 1 teaspoon baking powder.
  • Gently fold ⅓ cup blueberries into mixture.
  • Divide into 6 equal portions.  Use silicone molds or muffin tray.
  • Bake at 350 for about 20 mins.
  • Enjoy!
Try this recipe that is similar to a mug cake, but cooked in the oven instead of the microwave.  Cooking this recipe in the oven rather than microwave adds some fluffiness.
