Instructions
- Chop 5 stalks asparagus into thirds. Add 1 tablespoon coconut oil to oven-safe skillet over medium heat. Once hot, add asparagus and cook for 3 minutes.5 stalks asparagus, 1 tablespoon coconut oil
- Whisk 2 eggs with 1 tablespoon heavy whipping cream. Pour egg mixture into skillet with asparagus. Reduce heat to low.2 eggs, 1 tablespoon heavy whipping cream
- Set oven to broil on high. Transfer skillet to oven and broil for 2 to 3 minutes, until eggs are just set. Watch closely to prevent burning.
- Serve with ½ avocado and 4 slices bacon.4 slices bacon, ½ avocado
