Ingredients

  • 4 slices bacon cooked
  • 2 eggs large
  • 5 stalks asparagus
  • 1 tablespoon heavy whipping cream
  • 1 tablespoon coconut oil
  • ½ avocado medium

Instructions

  • Chop 5 stalks asparagus into thirds. Add 1 tablespoon coconut oil to oven-safe skillet over medium heat. Once hot, add asparagus and cook for 3 minutes.
  • Whisk 2 eggs with 1 tablespoon heavy whipping cream. Pour egg mixture into skillet with asparagus. Reduce heat to low.
  • Set oven to broil on high. Transfer skillet to oven and broil for 2 to 3 minutes, until eggs are just set. Watch closely to prevent burning.
  • Serve with ½ avocado and 4 slices bacon.
Eggs, asparagus, bacon, and avocado are a perfect breakfast combination.  This recipe is somewhere between an omelette and a frittata.
