Instructions
- With an electric mixer, mix together wet ingredients: egg, heavy cream, peanut butter, and vanilla extract.
- Add dry ingredients. You can use the electric mixer or fold in the dry ingredients with a rubber spatula.
- Place mixture into mini-muffin tray or larger sized trays if you’re making brownie a la modes.
- Bake in oven for 15-25 minutes, depending on the size of your brownie. Use a toothpick or fork to make sure that the inside of the brownie is completely cooked.
These brownies use peanut butter to add a moist texture. This recipe used crunchy peanut butter for a nutty texture, if you like crunch. If you’d rather have smoother brownies, then you can use creamy peanut butter. Serve this with some vanilla keto-friendly ice cream and nuts for a brownie a la mode!
