Ingredients

  • 2 cucumbers
  • 3 cloves fresh garlic
  • 2 cups plain coconut milk yogurt unsweetened
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon fresh lime juice
  • 1 teaspoon fresh parsley
  • 1 teaspoon fresh dill
  • teaspoon ground cumin
  • ½ teaspoon garlic salt

Instructions

  • Trim ends of 2 cucumbers and shred on large shredding holes of a grater.

  • With your hands, squeeze out as much liquid as possible from shredded cucumber.
  • Use smaller grater holes to grate 3 cloves fresh garlic.

  • In a medium bowl add 2 cups plain coconut milk yogurt, 1 teaspoon fresh lemon juice, 1 teaspoon fresh lime juice, 1 teaspoon fresh parsley, 1 teaspoon fresh dill, ⅛ teaspoon ground cumin, and ½ teaspoon garlic salt. Mix together until well incorporated.
