- Dip onion in egg mixture.
- Return to flour mixture.
- Dip in egg mixture again. Make sure that the onion is fully covered.
- Finally, dip the onion in the pork rinds, ensuring onion is completely coated.
- If you have a deep fryer, set it to 350 degrees and fry the onion rings. If you do not have a deep fryer, get a small sauce pot and fill it with about 2 cups avocado oil. Turn on medium-high heat. Use a meat thermometer to check the temperature of the oil. Once the oil is at 350 degrees, drop in the onion ring away from you so that the hot oil doesn’t splash back at you. Use tongs to flip the onion ring over about 2 to 3 minutes after you intially drop it into the oil. If you don’t have a meat thermometer, leave the oil on the heat for 5 to 6 minutes to let it warm up.2 cups avocado oil
- Serve with a low carb marinara sauce.
It is hard to believe that these onion rings are keto-friendly. You will not be able to tell the difference. Make sure to fry them in non-GMO safflower oil. This recipe’s nutritional information is based on 3 large onion rings. You can multiply this recipe times however many onion rings you decide to make. They are high in fat and very filling, so we think 3 is the perfect amount.
