Set up breading station with three medium sized bowls. In first bowl, add ¼ cup coconut flour. In second bowl, add 3 eggs. In third bowl, add 2 cups pork rinds.

Coat 3 onion rings in coconut flour, dip into eggs, then return to flour for second coating.

Dip back into eggs, making sure it’s fully covered. Then press into pork rinds until completely coated.
Set deep fryer to 350 degrees F / 177 degrees C. Fill with 2 cups avocado oil. Carefully fry onion rings.
If you don't have deep fryer, fill sauce pot with oil. Once hot, drop onion rings. Use tongs to flip onions over 2 to 3 minutes on each side.
