Set up your breading station. Get 3 medium-large sized bowls. In first bowl, add ¼ cup coconut flour. In second bowl, add 3 eggs. In third bowl, add 2 cups pork rinds.

Dip 3 onion rings in coconut flour one at the time. This will just be a light coating.

Dip onion in egg mixture.
Return to flour mixture.
Dip in egg mixture again. Make sure that the onion is fully covered.
Finally, dip the onion in the pork rinds, ensuring onion is completely coated.
If you have a deep fryer, set it to 350 degrees and fry the onion rings. If you do not have a deep fryer, get a small sauce pot and fill it with about 2 cups avocado oil. Turn on medium-high heat. Use a meat thermometer to check the temperature of the oil. Once the oil is at 350 degrees, drop in the onion ring away from you so that the hot oil doesn't splash back at you. Use tongs to flip the onion ring over about 2 to 3 minutes after you intially drop it into the oil. If you don't have a meat thermometer, leave the oil on the heat for 5 to 6 minutes to let it warm up.
