Ingredients

  • ¼ cup coconut flour
  • 3 eggs beaten
  • 2 cups pork rinds ground
  • 3 onion rings thick-cut
  • 2 cups avocado oil

Instructions

  • Set up breading station with three medium sized bowls. In first bowl, add ¼ cup coconut flour. In second bowl, add 3 eggs. In third bowl, add 2 cups pork rinds.

  • Coat 3 onion rings in coconut flour, dip into eggs, then return to flour for second coating.

  • Dip back into eggs, making sure it’s fully covered. Then press into pork rinds until completely coated.
  • Set deep fryer to 350 degrees F / 177 degrees C. Fill with 2 cups avocado oil. Carefully fry onion rings.
  • If you don't have deep fryer, fill sauce pot with oil. Once hot, drop onion rings. Use tongs to flip onions over 2 to 3 minutes on each side.
  • Serve with a low-carb marinara sauce and enjoy!
