Ingredients

Tabbouleh:

  • 2 tablespoon olive oil
  • cups cauliflower rice
  • 3 roma tomatoes medium, finely diced
  • 1 cucumber medium, finely diced
  • ¼ cup mint finely chopped
  • 1 bunch curly parsley finely chopped
  • 2 stalks green onions thinly sliced
  • ¼ cup hemp hearts

Dressing:

  • 3 tablespoons extra virgin olive oil
  • 3 tablespoons lemon juice
  • ½ teaspoon garlic powder

Instructions

  • Cook the 1½ cups cauliflower rice. Set aside to cool.
  • Combine the 2 tablespoon olive oil, 3 roma tomatoes, 1 cucumber, ¼ cup mint, 1 bunch curly parsley, and 2 stalks green onions in a large bowl.
  • Add cauliflower rice (once cooled) and ¼ cup hemp hearts.
  • In a small bowl, whisk together 3 tablespoons lemon juice, 3 tablespoons extra virgin olive oil and ½ teaspoon garlic powder. Pour dressing over the cauliflower tabbouleh and toss to combine.
