Cook the 1½ cups cauliflower rice. Set aside to cool.

Combine the 2 tablespoon olive oil, 3 roma tomatoes, 1 cucumber, ¼ cup mint, 1 bunch curly parsley, and 2 stalks green onions in a large bowl.

Add cauliflower rice (once cooled) and ¼ cup hemp hearts.

In a small bowl, whisk together 3 tablespoons lemon juice, 3 tablespoons extra virgin olive oil and ½ teaspoon garlic powder. Pour dressing over the cauliflower tabbouleh and toss to combine.
