Ingredients

Tabbouleh:

  • 2 tablespoon olive oil
  • cups cauliflower rice
  • 3 roma tomatoes medium, finely diced
  • 1 cucumber medium, finely diced
  • ¼ cup mint finely chopped
  • 1 bunch curly parsley finely chopped
  • 2 stalks green onions thinly sliced
  • ¼ cup hemp hearts

Dressing:

  • 3 tablespoons extra virgin olive oil
  • 3 tablespoons lemon juice
  • ½ teaspoon garlic powder

Instructions

Tabbouleh:

  • Heat 2 tablespoon olive oil in pan. Add 1½ cups cauliflower rice and cook until tender. Set aside to cool.
